Todays delicious recipe is sponsored by my friends at Burnbrae Farms, a 6th generation egg farmers family business supplying high quality eggs and egg products. All thoughts and opinions are my own.

More on the state of the art solar farms below, and now lets talk about the eggs. Theres something about bread bowls and baked eggs that screams comfort.

BAKED EGGS

Baking eggs is one of my favorite ways to cook eggs for a crowd. Youll love todays egg recipe since theyre baked in bread bowls so they feel like a full meal.

You can choose any type of bread works great here, as long the breads is not pre-sliced. I love to slice only the tops off and then remove the inside of the bread.

Quick note on the bread, if you start with a crunchy type of bread such as a ciabatta, youll certainly end up with crunchy eggs in bread bowls.

Likewise if you start with a soft type of bun, youll end up with soft shells for the eggs. I chose pretzel buns today because i love how chewy they are.

This egg recipe are super easy and you can adjust the cooking to soft, medium or hard boiled eggs.

OVEN BAKED EGGS

Heres why I love to bake eggs in the oven.

-You can cook a dozen eggs (or more) at the same time.

-No oil or butter splats on your stove.

-While the eggs are baking, use the time to finish off your brunch or breakfast preparation.

-You have full control on how runny or hard you prefer the eggs to be.

-Oven baked eggs come out perfect and evenly cooked every single time.

-You can flavor the eggs, add different toppings, cheeses and bake them differently.

-If youd like to skip the bread, try baking the eggs in a large tomato (after removing the cavity) or in an avocado for a low carb keto version.

-You can bake the eggs in a buttered muffin pan. Likewise, you can bake the eggs all at once in a large casserole dish with herbs, garlic and cream.

HOW TO BAKE EGGS

Now that you know why I love oven baked eggs, heres how Ive made the egg recipe today in step by step.

First of all, start with the bread. Pick your favorite type of bun and slice off the tops only, not in the middle like you would for a burger. Remove any extra bread form the inside.

Sprinkle a layer of cheese at the bottom of the bread. This is probably optional, but I absolutely love it because it prevents soggy bottoms from the eggs.

Now the eggs, choose quality Burnbrae eggs. Whether free run, free range, organic or omega 3 eggs. Crack the egg in a small bowl and then carefully pour it over the cheese.

Season the eggs with salt, pepper, fresh thyme and add in tomatoes. Heres where you can add your favorite toppings.

Bake the eggs for 20 minutes. If youd like a harder yolk, switch to the broiler and broil for just 1-2 minutes.

Finally, add a layer of cheese on the top of the egg yolks and bake for 2 minutes just until the cheese melts.

Serve the egg bowls right away! Sprinkle extra herbs and seasoning if you like

BURNBRAE FARM TRIP

Sustainable agriculture is one of those things we read and hear about so often, but I very rarely get to see. So I was ecstatic to visit the largest solar egg farm in Canada earlier this month. It was a fascinating experience.

The farm has four barns and produces eggs that are free run and free range. Not only does the farm rely on little power because it uses high efficiency motors, it also creates excess power. This excess power is shared with the neighbouring Burnbrae farm! How amazing is that?

I found that the roof was made entirely out of solar panels. Plus, just in case theres a shortage of power, the farm is equipped with a backup generator. We met the wonderful team and 6th generation family behind the business.

And of course we got to see the happy chicken roaming around the farm, and we got to watch plenty of eggs being packed! Read more about Burnbrae here.

BAKED EGGS TIPS:

-Pick quality eggs.

-Make sure the eggs youre baking are all the same size so they bake evenly.

-Adjust the done-ness of the yolks by using the broiler after baking.

-Add any topping you prefer to the eggs as long as they can cook at the same time as the eggs.

-Sprinkle a layer of cheese at the bottom of the bread to avoid a soggy bread.

-Season your eggs generously since the bread is plain.

-Serve the baked eggs right away or store them in the fridge and rewarm them in an oven for 5 minutes.

ENJOY!!!
